Breakfast is an EGGcelent way to start the day. Why not try something simple yet extraordinarily delicious to get your kids EGGcited. Melissa Fossier, R.D.,L.D., a registered dietitian at Children’s Health℠, whips up a delicious recipe for egg frittatas. Using three different food groups, this recipe is EGGstra healthy and sure to satisfy your kids' hunger.
Ingredients
- 3 egg whites (or ½ cup egg whites)
- 6 eggs
- ½ cup spinach, chopped
- ¼ cup tomatoes, chopped
- ¼ cup mozzarella cheese
- Pinch of salt, to taste
- Pinch of pepper, to taste
- Canola oil spray
Mix and match fillings:
Choose whichever vegetables or cheese you prefer. Some examples are below:
- ½ cup spinach, chopped
- ¼ cup tomatoes, diced
- ¼ cup onion, diced fine
- ¼ cup bell pepper, diced fine
- ¼ cup broccoli, cut into small florets
- ¼ cup mushrooms
- ¼ cup zucchini
- ¼ cup parmesan cheese
- ¼ cup cheddar cheese
Preparation
- Preheat oven to 350°F degrees.
- Combine eggs and egg whites in a measuring bowl and whisk together.
- Spray mini muffin tins with canola oil spray.
- Add chopped veggies and cheese into each muffin tin.
- Season each cup with salt and pepper.
- Pour egg mixture into muffin tins.
- Bake for 10-15 minutes until frittata is set and the eggs are cooked through.
- Enjoy with the whole family.
Storage and Expiration
You can store the frittata in a glass container in the refrigerator after the eggs have cooled. These will stay good for up to four days.
